甜甜圈
材料:
(A)
400g 高筋面粉
100g 低筋面粉
10g 即溶酵母粉
(B)
80g 细砂糖
10g 盐
20g 奶粉
(C)
50g 蛋
250g 冰水
(D)
100g
牛油
做法:
1.将材料(A)混合均匀,加入(B)学和(C)以中速搅拌5分钟, 再加入(D)继续搅拌醵10-15分钟至面团具光滑状和富有弹性。
2. 工作台撒上少许面粉,将面团滚圆,滚加入无盐奶油用慢速搅入,并盖上保鲜膜, 进基本发酵约30-40分钟或双倍大。
3. 用杆面棍将面团杆成1-1.5cm厚的面皮,松弛缓10分钟后,用甜甜圈模具将面皮压出圆圈型, 放在表面撒粉的平盘上, 静置疑30分钟左右做最后发酵, 直至体积变大, 变轻。
4. 锅中放入适量的油,烧热至大约160-170度,再将发酵完成的甜甜圈放入炸至两面呈金黄色后,捞起, 滴干油即可。

ReplyDeleteSSB:Don say that. It took me long to understand after many tries. for donut, you can take put aside little dough for testing oil heat. If the fire is too hot, the dough will bubbles up speedy fast and if donut get fried too fast, it forms crusty on the skin while the inside may still under cooked. On the contrary, If the oil is too low, the dough will sink into the bottom of the wok, this will take longer to fry the donuts. This causes the donuts greasy, not nice! So, medium heat is the right temperature. The dough should sink and immediately float to the top.

ReplyDeleteBeeBee: 酵母粉is the yeast. No baking powder is required. This is bread kinda donuts.
