Lately within the blogosphere, you will see this popular pastry cake everywhere with rave reviews. If now its known as football season, i would says its fruit pastry cake season! The minute I laid my eyes on this visually appealing with vivid colours , simple-to-prepare yet yields impressive results cake, I'm just adorned how fruitilicious this cake will be. What i love best, this cake flavoured with vanilla and orange zest is strong enough to waft the house while the cake is baking. Isn't that what we home-bakers enjoy?
I also love the texture of the cake, not greasy nor heavy, it's cross between sponge and butter cake. Like many whom tried, i have to agree that baking this cake is ULTRA addictive, so is eating it! The first cake i bake was gone within the day and makes me crave for more! For a second, i thought i'm preggy again lol! Hence, to satisfy my constant craving, i bake the second, third, fourth and still counting! I'm not sure when this crave will go off but am enjoying every bit bite of it.
Thank you Happy HomeBaking for sharing this recipe.

Hi! Hearty Bakes,
ReplyDeleteNice and yummy cake, this is one of my bake list too. Going to give it a try since now most of the fruits are available in the supermarket. Usually I will prefer to bake in paper cups caused easier for my kids to bring to sch for recess. I believe the baking time will be short since we are baking in paper cups too!

Hi Christina, baking time is shorter for paper cups. Its definitely easiler to pack them for children to bring for recess. Enjoy your bakes~
ReplyDeleteHi! Hearty Bakes,
ReplyDeleteThanks for your prompt reply, I really appreciate it. Happens to see some of the mix fruity tarts photos in your blog but couldn't find the recipe. Hope you can share the recipe with us. Thanks

Hi! Baked the cake last weekend in the paper cups but the results was not great perhaps I was too greedy that I fill the batter almost full. And I also I baked the cakes almost 1/2 hour which is half the baking time of the full cake. Will try again next time.

Hi Christine,
ReplyDeleteJust made this cake today after baking the lemony butter cake! (hehehehe busy bake day for me today - I will want to sleep all day tomorrow now!)
I made it in 7" square but took some mix out to put into paper cases as I was concerned tin would be too full. I think I could happily bake in the 7" sq next time and increase the fruits I used. (I used 70g each of Peach, cherry and raspberry.)
The cake came out beautiful I love the crisp topping, moist cake and the fruits! (Cake would probably taste more delicious if I didn't have this cold!)
I'm going to treat my work colleagues to this cake!
Christina Poh : Will certainly share the fruity tarts recipe the next time i bake again. For fruit pastry cake in small cuppies, just fill up half or up to 70% of paper cups. As for the baking time, you will have to use a skewer to test if cake is bake as the baking time is subjective depending on what size of paper cups you used. HTH.
ReplyDeletePlumLeaf 李葉: Great to hear that baking keeps you energetic. Enjoy your cake with your colleagues. I'm sure they will like it!
Hi
ReplyDeleteI tried this cake but the result was a pretty dry cake ! Don't know what happened ! I had to throw away most of it cos it tasted too dry to eat.
The cake came out beautiful but just dry. Would love to hear from you to know what I did wrong = (
Thanks
Chris
Chris: Many factors to it. My guess is possibly you have over-baked it.
